Kale and Brussels Salad with Maple Tahini Dressing

Servings: 4
Ingredients:
3 cups of curly kale, chopped
3 cups shredded brussels sprouts
1/2 cup slivered almonds
1/4 cup dried cranberries*
Dressing:
1/4 cup tahini
1/4 cup extra virgin olive oil
1 tbsp maple syrup
2 tsp apple cider vinegar
1 tbsp maple syrup
1/4 tsp sea salt
1/2 tsp red chili flakes*
*optional
1. In a large bowl, whisk together all the dressing ingredients.
2. Toss the kale, brussels, 1/2 the almonds, and cranberries with the dressing. Let sit for about 5 minutes.
3. Taste, and adjust with salt.
4. Top the salad with remaining almonds. Enjoy!
